Quail eggs are very versatile, a great substitute for chicken eggs.
3 quail eggs = 1 large chicken egg
Here are a couple quick recipes from Chef Dynkleton
Fresh Quail Egg Mayo
Ingredients:

6 quail eggs
-
1/4 tsp dry mustard
-
1/4 tsp black pepper
-
1/4 tsp salt
-
1/2 cup extra virgin olive oil
Directions:
-
Use quail egg scissors to open quail eggs into a mixing bowl or mason jar
-
Add dry mustard, black pepper, and salt
-
Begin emulsifying with a stick mixer while slowly drizzling in extra virgin olive oil
-
Emulsify until all oil is incorporated and desired texture is achieved
Makes approximately 1 cup of mayo​
Refrigerate when done



Yes, it's a recipe for two, and we only have one glass pictured. My husband wasn't smart when he took the picture. He drank it before I was able to catch the oops!
Raw Egg Nog for Two
Ingredients:

6 quail eggs
-
1/2 cup heavy cream
-
1/4 cup sugar
-
pinch of salt
-
1/4 tsp vanilla
-
1 cup milk
-
Dusting of nutmeg
Directions:
-
Combined all ingredients except for nutmeg in a blender
-
Blend until creamy smooth and frothy
-
Pour into glasses and dust with nutmeg
Makes approximately 16 oz
Keep refrigerated
You may also add any of your favorite spirits to make it a tradition eggnog
Hard Boiled Quail Eggs
Why do you need a recipe for this? Because they are hard to peel, following these directions will make peeling so much easier! Trust us on this one
Directions:

Soak quail eggs in a bowl of cold water for about 25 minutes

Fill a pot with water and bring it to a boil.

Use a slotted spoon to move the eggs from the cold water bath to the already boiling water.

Cook over high heat for 4 minutes while slowly stirring the eggs
-
Turn heat down and let them simmer for 5 minutes
-
Using the slotted spoon, remove the eggs and place in another cold water bath until completely cool
-
Crack the egg shells and let them soak for 10 minutes
-
Peel your eggs

Refrigerate when done
Use your hard boiled eggs for your salads, ramen, egg salad sandwiches, or by themselves for a little snack!

Scotch Quail Eggs
Ingredients:

12 hard boiled quail eggs
-
32 oz of breakfast sausage
-
3 quail eggs
-
1/2 cup flour
-
1 cup seasoned bread crumbs
-
Your favorite frying oil
Directions:
-
Gently encase 2 ounces of sausage around each dry hard boiled quail egg
-
Freeze for one hour
-
Perform standard breading procedure with flour, then egg wash, then bread crumbs
-
Deep fry at 350° F degrees for 5 to 6 minutes until golden brown
Serve with your favorite dipping sauce
